Cook – Half Moon Cay (Bahamas)

About the role

The Cook will plan, prepare, and serve balanced meals for staff and crew at Half Moon Cay, a private island destination operated by Carnival Corporation. Working in a high‑volume kitchen, you will ensure food quality, safety, and timely service across three daily meals.

Key responsibilities

• Prepare breakfast, lunch, and dinner for staff and crew on a rotating weekly menu.
• Maintain consistent quality, presentation, portion sizes, and accommodate dietary restrictions.
• Lead the kitchen in the Chef’s absence and adjust menus based on supply availability.
• Sanitize work areas, conduct deep cleaning, monitor refrigeration temperatures, and manage waste disposal.
• Support food safety compliance, including HACCP documentation and regulatory inspections.
• Monitor inventory, apply FIFO practices, assist with ordering, and generate monthly inventory reports.
• Distribute supplies, assist with special events, and perform additional duties as assigned.

Required profile

• High school diploma or equivalent; formal culinary training or equivalent experience required.
• Minimum two years of experience in a high‑volume or institutional kitchen.
• Ability to work in a remote, off‑grid environment and adapt to changing operational needs.

Required skills

• Grilling, baking, sautéing, boiling and other cooking techniques.
• Knowledge of HACCP food safety standards.
• FIFO inventory management.
• Operation of commercial kitchen equipment such as ovens, grills, deep fryers and mixers.
