Pastry Sous Chef

About the role

Join the culinary team at SLS Baha Mar as a Pastry Sous Chef, reporting to the Executive Pastry Chef. You will oversee pastry production, ensure high‑quality output, and support guest satisfaction in an upscale resort environment.

Key responsibilities

• Supervise and direct all pastry operations, maintaining quality standards and consistency.
• Control food and labor costs while maximizing efficiency and productivity.
• Develop new pastry, dessert, and bread recipes and oversee daily production.
• Ensure compliance with HACCP, local health regulations, and company sanitation standards.
• Train and mentor kitchen staff, fostering a positive and collaborative atmosphere.

Required profile

• Minimum three years of supervisory experience in a pastry kitchen, preferably in an upscale hotel or lifestyle brand.
• Strong leadership, organizational, and time‑management skills with the ability to work under pressure.
• Bachelor’s degree preferred; high school diploma or equivalent required.
• Ability to work flexible schedules reflecting the hospitality industry's cyclical nature.

Required skills

• Advanced pastry techniques including baking, cake decorating, and ice‑cream making.
• Knowledge of HACCP and food safety regulations.
• Proficiency with Microsoft Office (Word, Excel, Outlook, PowerPoint).
• Familiarity with hospitality systems such as Opera, GoConcierge, and HotSOS.
