Senior Sous Chef - Carna Steakhouse

About the role

SLS Baha Mar in Nassau, The Bahamas, is looking for a Senior Sous Chef for its Culinary team at Carna Steakhouse. Working under the guidance of the Chef de Cuisine, the Senior Sous Chef coordinates, supervises and directs all aspects of the restaurant's food production, maintains profitable culinary and food and beverage operations, and ensures high-quality products and service.

Key responsibilities

• Lead the kitchen staff, manage food-related systems and supervise all kitchen areas to deliver a consistent high-quality product
• Train and coach junior and lower-level staff, document training sessions and run regular appraisals
• Help the Chef de Cuisine with menu planning and control food and labour costs while maximising guest satisfaction
• Monitor inventory, food costs and promotions to optimise profitability
• Ensure staff follow Ennismore policies, including health and safety, food hygiene, maintenance, emergency procedures and liquor licensing
• Recruit proactively, keep the kitchen team motivated and implement cost-saving and profit-enhancing measures
• Use Microsoft Office, Micros, ADP, Open Table and other departmental systems, and attend mandatory meetings and community events

Required profile

• Experience managing luxury brands
• Excellent communication in English, oral and written, and ability to work under pressure
• Proven leadership, problem-solving and prioritisation skills
• Ability to lift 50 lbs unaided and 150 lbs with equipment; PPE provided
• Seven-day-a-week schedule; additional languages preferred
