Butcher – Half Moon Cay, Bahamas

About the role

We are looking for a skilled Butcher to join our food‑service team on Half Moon Cay, Bahamas. The successful candidate will be responsible for receiving, inspecting, preparing and portioning a wide range of meats, poultry, seafood and specialty proteins to support restaurant, buffet and event operations.

Key responsibilities

• Receive, inspect, cut, trim, bone, grind, marinate and portion meats, poultry, seafood and specialty proteins according to specifications and production schedules.
• Prepare specialty cuts for restaurants, buffets, beach barbecues, private events and crew dining.
• Maintain strict HACCP, food safety and sanitation standards, label, date, store and rotate products using FIFO.
• Monitor refrigeration temperatures, prevent cross‑contamination and keep the butcher room and equipment clean and organized.
• Maintain accurate inventory, assist with counts, ordering and forecasting based on occupancy and operational needs.
• Support culinary teams by delivering products on time for daily service, banquets and large‑scale catering.
• Operate butcher equipment and tools safely, conduct routine inspections and report maintenance needs.
• Follow occupational health and safety procedures, use PPE and support waste‑reduction and sustainability initiatives.

Required profile

• Proven experience in a commercial butcher or meat‑processing environment.
• Strong knowledge of HACCP principles and food‑safety regulations.
• Ability to work efficiently in a fast‑paced hospitality setting.
• Attention to detail for product quality, yield management and waste minimisation.
• Physical ability to handle heavy loads and stand for extended periods.
