Senior Sous Chef

About the role

SLS Baha Mar in Nassau, The Bahamas, is looking for a Senior Sous Chef to join its Culinary team. Working under the general guidance of the Chef de Cuisine, the role coordinates, supervises and directs all aspects of the restaurant's food production while keeping food and beverage operations profitable and maintaining high quality products and service. The Senior Sous Chef works closely with the Chef de Cuisine to control food and labour costs while maximising guest satisfaction.

Key responsibilities

• Lead the kitchen staff, manage food-related systems and set clear goals for the team
• Supervise preparation, presentation and portion control of raw and cooked foods, and oversee all kitchen areas for consistent quality
• Train and coach junior staff, document training sessions and run regular appraisals
• Help the Chef de Cuisine with menu planning and assist with staffing levels through proactive recruiting
• Monitor inventory, food costs and promotions to optimise profitability
• Ensure compliance with Ennismore policies, including health and safety, food hygiene, maintenance, emergency procedures and liquor licensing
• Develop and implement cost-saving and profit-enhancing measures
• Work seven days a week, with varying schedules to match business needs

Required profile

• Experience managing luxury brands
• Proven leadership, entrepreneurial spirit and focus on coaching and team motivation
• Excellent communication in English, oral and written, with guests and employees
• Ability to work under pressure and solve problems quickly
• Physical ability to lift at least 50 lbs unaided and to handle PPE; neat, clean appearance and professional grooming
• Other languages preferred
