Senior Sous Chef - Carna

About the role

SLS Baha Mar in Nassau, The Bahamas, is looking for a Senior Sous Chef to join its Culinary team. Working under the general guidance of the Chef de Cuisine, the role coordinates, supervises and directs all aspects of the restaurant's food production while keeping food and beverage operations profitable and maintaining high quality products and service. The Senior Sous Chef works closely with the Chef de Cuisine to control food and labour costs while maximising guest satisfaction.

Key responsibilities

• Lead the kitchen staff, manage food-related systems and set clear goals for the team
• Supervise preparation, presentation and portion control of raw and cooked foods, and oversee all kitchen areas for consistent quality
• Train and coach junior staff, document training sessions and run regular appraisals
• Help the Chef de Cuisine with menu planning and maintain Ennismore policies, including health and safety, food hygiene, maintenance, emergency procedures and liquor licensing
• Monitor inventory and food costs, and develop cost-saving and profit-enhancing measures
• Recruit proactively to maintain staffing levels and act as a calm, positive role model during busy periods and emergencies
• Use Microsoft Office, Micros, ADP, Open Table and other departmental systems, and keep the work area clean and organised

Required profile

• Experience managing luxury brands
• Excellent communication in English, oral and written, with guests and staff
• Proven leader with entrepreneurial spirit, innovation and a focus on coaching and team motivation
• Ability to work under pressure, solve problems quickly and handle physical demands such as lifting 50 lbs unaided and 150 lbs with equipment
• Neat, clean appearance and professional conduct; additional languages preferred
