Back of House Technician – Half Moon Cay, Bahamas

About the role

The Back of House (BOH) Technician ensures a clean, safe, and well‑organized kitchen and service environment at Half Moon Cay. Working closely with cooks and Food & Beverage supervisors, the technician supports daily operations across kitchen, pavilion, and beach service areas.

Key responsibilities

• Maintain sanitary conditions by cleaning waste bins, floors, prep surfaces, appliances, and countertops daily.
• Sanitize island grills and perform pressure cleaning of bars and pavilion areas on non‑ship days.
• Conduct deep cleaning of kitchen equipment such as ice machines, dishwashers, hoods, grease traps, floor drains, and bar fans.
• Rotate stock in freezers, chillers, walk‑in units and dry storerooms, applying FIFO principles.
• Monitor and record refrigeration temperatures, reporting any abnormalities.
• Assist cooks with basic food preparation tasks, including chopping vegetables and portioning meat.
• Support waste management and coordinate used‑oil disposal with the Environmental Technician.
• Communicate effectively with kitchen and F&B teams to ensure smooth service flow.

Required profile

• Ability to operate standard food‑service equipment safely and efficiently.
• Strong multitasking skills in a fast‑paced environment.
• Team player with clear communication and collaboration abilities.
• Valid full medical certificate maintained bi‑annually.
• Compliance with uniform standards, including a secured hair net.
• Familiarity with food safety and hygiene regulations.
