Senior Sous Chef

About the role

SLS Baha Mar, a luxury resort in Nassau, The Bahamas, is looking for a Senior Sous Chef to join its Culinary team. Working under the guidance of the Chef de Cuisine, the Senior Sous Chef coordinates, supervises and directs all aspects of the restaurant's food production, maintains profitable culinary and food and beverage operations, and ensures high-quality products and service.

Key responsibilities

• Lead the kitchen staff, manage food-related systems and set clear goals for the team
• Supervise all kitchen areas, food preparation, presentation and portion control, and assist with menu planning
• Monitor inventory, food costs and promotions to optimise profitability
• Train and coach junior staff, document training sessions and run regular appraisals
• Recruit proactively to maintain staffing levels and ensure staff follow Ennismore policies
• Develop cost-saving measures and ensure compliance with health and safety, food hygiene, maintenance, emergency procedures and liquor licensing
• Work seven days a week, with varying schedules to match business needs

Required profile

• Proven experience managing luxury brands
• Exceptional communication in English, oral and written, with guests and staff
• Ability to work under pressure and solve problems quickly
• Physical ability to lift at least 50 lbs unaided and to handle heavy boxes; PPE provided
• Neat, clean appearance and professional conduct
• Additional languages preferred

Required skills

• Proficiency in Microsoft Office (Word, Excel, PowerPoint)
• Use of POS and reservation systems such as Micros, ADP and OpenTable
• Math skills with percentages
