Chef de Cuisine - Cleo Mediterranean

About the role

SLS Baha Mar in Nassau, The Bahamas, is looking for a Chef de Cuisine to lead all culinary operations at Cleo Mediterráneo, a Mediterranean restaurant. The role covers kitchen operations, team development, food quality, cost control and guest satisfaction, and requires a hands-on leader who maintains the restaurant's culinary vision.

Key responsibilities

• Direct and manage daily kitchen operations and enforce culinary standards, recipes and presentation guidelines
• Work with the Executive Chef on menu development, seasonal offerings, tasting menus and chef's specials
• Recruit, train and mentor kitchen staff, run pre-service briefings and build a succession pipeline of Sous Chefs and supervisors
• Manage food cost through purchasing, portion control and waste reduction, and monitor labor costs and inventory variances
• Ensure food safety compliance (HACCP), sanitation standards and allergen management
• Respond to guest feedback, support VIP dining and special events, and collaborate with front-of-house leadership

Required profile

• At least 5 years of progressive leadership experience in upscale Mediterranean, fine-dining, luxury hotel or destination restaurants
• Previous experience as Sr. Sous Chef or Chef de Cuisine required
• Culinary degree or professional culinary certification preferred; HACCP and food safety certification required
• Ability to lift 50 lbs unaided and 150 lbs with equipment, and to work varying schedules due to the hospitality cycle

Required skills

• Strong knowledge of Mediterranean cuisines (Greek, Italian, Turkish, Lebanese, North African, Spanish)
• Food cost analysis, inventory control and scheduling
• Proficiency in Microsoft Office (Word, Excel, PowerPoint) and hospitality software such as Micros and ADP
• Excellent English communication and leadership skills
